Hello, June!

Easy Paleo Taco Salad

With summer on the way, I’ve totally been in the mood for mexican food…

This paleo taco salad has been my recent go-to!

What you will need (serving size 2):

  • 1 pound grassfed ground beef*
  • 1 small red onion
  • cherry tomatoes*
  • spinach* (or favorite green leaf)
  • sweet plantain
  • coconut oil
  • taco seasoning
  • avocado
  • lime*

(* means to make sure to my organic)

Steps:

  1. heat 1 TBS of coconut oil over medium heat and add ground beef. Cook until meat is cooked through.
  2. Once meat is ready, add spice mixture to meat and mix thoroughly. Add 1/4-1/2 cup water and let simmer for 1-2 minutes until water is absorbed.
  3. Next, heat up a clean skillet to medium and add coconut oil. You want to have a good amount of coconut oil because you are going to “fry” the plantains in it. Once the oil is heated, add sliced plantains to oil. You want to cut the plantains into fairly thin slices. Cook slices for about 90 seconds on each side and then remove with slotted spoon and place on paper towel to soak up extra oil. Season with cinnamon, salt or leave plain.
  4. For the guacamole, I mash 1 large avocado with 1/2 small diced red onion and about juice from 1/2 of a juicy lime.
  5. Next, prepare the salad! I like to make personalized taco salads so I start with two nice wide bowls. I fill the bottom of the bowl generously with greens (I like spinach.) Once you’ve done that, add the seasoned beef on top. Then top with a generous scoop of guacamole. Sprinkle with extra red onions (diced), cherry tomatoes sliced in halves or quarters and fried plantains.
  6. Serve with slices of lime. And feel free to squeeze extra lime juice all over the salad like I do!

Hope you love this as much as I do! It’s much easier than it may look. This is one of my easy go-to meals when I’m in need.food.now. mode!

Coconut Oil

I’m in love with coconut oil. Virgin coconut oil.

Since being introduced to coconut oil, I haven’t turned back. It is now a part of my daily life. I cook, bake, moisturize and wash my face with coconut oil.

So, what is coconut oil?

Coconut oil is the edible oil that comes from the coconut. Coconuts produce edible meat, water and oil. However, research suggests that the oil is the most nutrient dense part of the coconut. Coconut oil is a super healthy fat.

Some Properties of Coconut Oil:

  1. It is an antioxidant
  2. Anti-inflammatory
  3. Anti-bacterial
  4. Anti-fungal
  5. Strengthens the immune system

How to use it in your daily life:

  1. Cook with it! Sauté veggies, butter replacement and great for baking
  2. Clean your face with it (Oil Cleansing Method)
  3. Use as a moisturizer, “shave cream,” or aftershave for smooth and hydrated skin
  4. Hair Mask to help revitalize hair
  5. Consume internally to help with inflammation (great supplement for athletes)

Listed above are only a few of the hundreds of ways to use coconut oil!

I have tried many different brands of coconut oil like Trader Joe’s coconut oil, Spectrum, Artisana, etc. However, hands down my favorite brand of coconut oil is DEFINITELY Nutiva Organic Extra-Virgin Coconut Oil. Make sure to buy extra-virgin!!! Next on my list to try is Tropical Traditions; I have heard great things about it.

Not Your Mother’s Denim

I first came across Mother Denim at a small boutique in Bend, Oregon. I was drawn to multiple different pairs of jeans in the boutique…all of which were by Mother Denim. I was a little bit turned off by the name because I thought “Mother Denim? I don’t want to wear mom jeans!” No offense to all the beautiful mama’s out there, but I like my jeans to sit pretty low on my waist and hug tight. Anyways, I didn’t end up trying on any of the Mother Denim despite the awesome washes.

Fast forward a few months later and one of my favorite fashion bloggers is posting about Mother Denim! A few days after that, I checked out Anthropologie online and was immediately in love with two pairs of pants…by none other than Mother Denim! So, let’s just say I’m more than convinced that these jeans aren’t just for mom’s…

On another note, printed and embroidered denim is all the rage this season and Mother Denim is killing it!

Valentine’s Day

With Valentines Day coming up, I wanted to do a post about it.

Valentine’s Day just so happens to be one of my favorite holiday’s of the year!

I have a memory of a Valentine’s Day when I was in elementary school. I walked downstairs and my mom had set a couple of small presents on the table. I was so excited to get cute red & pink heart themed hair ties and the Annie musical CD.

Best. Valentine’s Day. Ever.

Since then, I have loved Valentine’s Day. For me, Valentine’s Day is about self-love. A day where I treat myself!

Whether it’s a small treat like walking down to the bakery and treating myself to a latte and pastry or a more indulgent treat like a spa pedicure, I like to do something that makes me feel good and recognizes that I love the relationship that I have with myself. This day is really the day that I stop putting off something that I have been wanting to do, eat, buy and just do it! So this year, I’m thinking about a pedicure, because seriously…it’s been on my mind for, um, months!

My boyfriend and I don’t make too big of a deal over V-Day. We don’t feel like it’s important to choose one day out of the year to recognize love. Instead, we are constantly doing & showing small gestures of love! We will probably cook a delicious dinner together and maybe share a piece of cake – keeping it casual.
